Five Ways to Up Your Dim Sum IQ: Ed Schoenfeld

1. Go early
"Most large Cantonese restaurants that feature dim sum have two teams of chefs: the ?cooking? chefs who work the woks, and whose day starts at 10 to 11 a.m., and the dim sum chefs, who arrive at sunrise and finish up by mid-afternoon. In cities like Hong Kong and Guangchou, where dim sum reigns, the locals think of dim sum as an early-in-the-day meal and many diners are enjoying ?yum cha? (literally ?drink tea?) by 10 a.m.

In the United States, the busy period for dim sum usually starts at 11 a.m. and begins to slow by 1? p.m. By 2 p.m., the chefs are packing up and getting ready to leave. So suggestion number one is this: dine on the early side. It should be less hectic, easier to get a table and the food will be at its freshest.

And rule number one is this: if it?s close to 2 p.m., eat something other than dim sum; you don?t have to leave the restaurant, just order from the regular menu - say some barbecue or a noodle or rice dish."

2. Look for the fresh stuff
"One of the biggest dim sum dining challenges is determining which items are freshest. In particular, hot carts containing steamed items may keep your food warm and immediately available, but also continue to cook it. Dough and fillings can easily be past their prime after just a few minutes of dining room circulation. So here are a few tricks:

  • Look for kitchen runners (servers whose job it is to transport freshly made food from the kitchen to the dining room) carrying trays stacked high with steam baskets. Chances are they?ve been sent out to replenish diminishing supplies of whatever that particular cart is hawking. Feel free to take your check and walk over to the newly stocked cart to score a freshly cooked item.
  • A related strategy is to pay attention to how many orders of a particular item are available on passing carts. If there is only one of something, chances are excellent that it is the last of a batch and therefore less fresh than one would like. Conversely, if there are many orders of something, chances are that it?s fresh.
  • Look closely at the food. If it looks like the seams of a dumpling are detaching from one another or the item is broken in any way, it?s likely to be past its prime."

3. Choose your beverage
"When you sit down at your table, your server will plop down a pot of tea. There are a few things you should know about this. First of all, it?s not free. All dim sum restaurants charge for tea on a per-person basis. Basically, it?s a cover charge that everyone pays whether they drink tea or not. Certain customers who are known to the house may have their checks stamped with a red ink message that says, 'free tea,' a mark of a true VIP in that restaurant?s universe.

Second, most restaurants have different kinds of tea, and if you?re a known regular they may (should) ask you what kind of tea you would like. (My tea of choice? is made from dried white chrysanthemum flowers. I prefer it briefly steeped for just a minute with a small amount of sugar added to the pot.)

Another thing to know is that many dim sum restaurants make delicious coffee that you can request instead of tea. It costs more than the tea, is often served in a paper cup, and if you don?t drink it black, you should direct the server to put in milk and sugar - and say how much of each. Dim sum restaurants with creamers are rare."

4. Holidays and weekends have more variety
"There are traditional but unwritten rules about when the freshest and greatest variety of dim sum are available. It?s pretty straightforward.

The best variety is on weekends and holidays when there are frequently many more preparations available than at any other time - in some restaurants this may mean 100 percent more things. And between 11 a.m. and 1 p.m. most dim sum restaurants produce the largest volume of food and the greatest variety of items.

Go early and you get the standards: shrimp dumplings, filled rice noodle cr?pe, shu mai (steamed dumplings) and rice porridge. By 11 a.m. the number of offerings is likely to double. The more uncommon dim sum are made in smaller quantities and when they run out, the kitchen reverts back to the basics - and a smaller number of items."

5. Don?t be afraid to order from a menu
"Should you be lucky enough to be enjoying dim sum in a high-end Hong Kong hotel, don?t be upset when you can?t find a rolling cart. In the best venues, where the chefs take great pride in their craft, all the dim sum is ordered off a menu, not chosen from a cart. Some of the fun and immediacy of a rolling cart is sacrificed, but the trade-off is that your food is cooked to order and should arrive in perfectly a point condition."

Tree resin captures evolution of feathers on dinosaurs and birds

Secrets from the age of the dinosaurs are usually revealed by fossilized bones, but a University of Alberta research team has turned up a treasure trove of Cretaceous feathers trapped in tree resin. The resin turned to resilient amber, preserving some 80 million-year-old protofeathers, possibly from non-avian dinosaurs, as well as plumage that is very similar to modern birds, including those that can swim under water.

U of A paleontology graduate student Ryan McKellar discovered a wide range of feathers among the vast amber collections at the Royal Tyrrell Museum in southern Alberta. This material stems from Canada's most famous amber deposit, near Grassy Lake in southwestern Alberta.

The discovery of the 11 feather specimens is described as the richest amber feather find from the late Cretaceous period. The amber preserves microscopic detail of the feathers and even their pigment or colour. McKellar describes the colours as typically ranging from brown to black.

No dinosaur or avian fossils were found in direct association with the amber feather specimens, but McKellar says comparison between the amber and fossilized feathers found in rock strongly suggest that some of the Grassy Lake specimens are from dinosaurs. The non-avian dinosaur evidence points to small theropods as the source of the feathers.

Some of the feather specimens with modern features are very similar to those of modern birds like the Grebe, which are able to swim underwater. The feathers can take on water giving the bird the ballast required to dive more effectively.

McKellar says the Grassy Lake find demonstrates that numerous evolutionary stages of feathers were present in the late Cretaceous period and that plumage served a range of functions in both dinosaurs and birds.

Stock index futures signal early losses (Reuters)

PARIS (Reuters) ? Stock index futures pointed to a lower open on Wall Street on Wednesday, with futures for the S&P 500 down 0.3 percent, the Dow Jones down 0.28 percent and the Nasdaq 100 down 0.36 percent by 0938 GMT (5:38 a.m. ET).

The Nikkei average fell 1.1 percent to a 2-1/2 year closing low, while European stocks edged higher in morning trade, helped by comments from European Commission President Jose Manuel Barroso who said the commission will present options soon for the introduction of euro-area bonds. (.EU)

Lingering concerns over French banks, however, limited the gains. Shares in BNP Paribas (BNPP.PA) dropped after the French bank announced a plan to sell 70 billion euros of risk-weighted assets to help ease mounting investor fears about French bank leverage and funding, while Societe Generale (SOGN.PA) fell after Moody's downgraded the bank by one notch, citing the its exposure to Greece's debt-stricken economy.

On the macro front, investors awaited the U.S. producer price index, retail sales and business inventories data.

China will keep monetary policy tight to contain inflation while forging ahead with structural reforms and boosting consumption to sustain long-term economic growth, Premier Wen Jiabao said.

Dell Inc (DELL.O) said its board authorized the repurchase of an additional $5 billion of its shares, a month after the world's No. 2 PC maker slashed its 2012 sales forecast on uncertainty in government and corporate spending.

General Electric Co (GE.N) said it would buy back Berkshire Hathaway Inc's (BRKa.N) preferred stake, handing back a lifeline it grabbed during the 2008 financial crisis.

Google Inc (GOOG.O) raised its offer for Motorola Mobility Holdings Inc (MMI.N) by 33 percent to $12.5 billion over two weeks of negotiations between the two companies, according to a regulatory filing.

A leak from a shallow-water crude oil pipeline in the Main Pass Area of the Gulf of Mexico has led Chevron (CVX.N) to shut down its offshore Louisiana Main Pass pipeline network, the company said.

U.S. stocks rose on Tuesday as investors bought shares beaten down in recent weeks and bet European leaders would take action soon to ease the Greek debt crisis.

The Dow Jones industrial average (.DJI) was up 44.73 points, or 0.40 percent, at 11,105.85. The Standard & Poor's 500 Index (.SPX) was up 10.60 points, or 0.91 percent, at 1,172.87. The Nasdaq Composite Index (.IXIC) was up 37.06 points, or 1.49 percent, at 2,532.15.

(AP) ? It sounded improbable on the surface that a New York City congressional district where Democrats have a 3-1 registration edge and have held office for nearly a century could even come close to electing a Republican to the U.S. House.

But voter frustration over the sour economy and President Barack Obama's policies made the improbable a reality, as a Republican political novice, Bob Turner, scored an upset victory in a special election Tuesday over David Weprin, a Democratic assemblyman from a prominent local political family. The surprising results in the Brooklyn and Queens-area district portend a perilous national environment for Obama as he prepares to seek re-election next year.

Turner said as much when he stepped before cameras to claim victory Tuesday night.

"This message will resound for a full year. It will resound into 2012," said Turner, a retired broadcasting executive. "I only hope our voices are heard, and we can start putting things right again."

Also Tuesday, Republican Mark Amodei won a landslide victory in a U.S. House special election in Nevada, an important presidential swing state.

The national mood has darkened since May, when Democrats scored their own unexpected win in another New York special election. Then, Democrat Kathy Hochul won an upset victory in a heavily Republican district by stressing her commitment to protecting Medicare, the government health plan for seniors.

Weprin tried to adopt that strategy, warning that Turner would try to cut programs like Medicare and Social Security. But with unemployment still stubbornly high and voters upset with Washington over the debt ceiling negotiations, the pledge to protect entitlements was less resonant this time.

Democratic leaders trying to explain their bad night blamed it on the quirkiness of low-turnout special elections.

"The results in NY-09 are not reflective of what will happen in November 2012 when Democratic challengers run against Republican incumbents who voted to end Medicare and cut Social Security while protecting tax loopholes for big corporations and the ultra wealthy," said Democratic Congressional Campaign Committee Chairman Steve Israel of New York.

Republicans, for their part, seized on Turner's win as reason to push back on Obama's proposed $447 billion jobs program, which he has been promoting at stops across the country.

"Tonight New Yorkers have delivered a strong warning to the Democrats who control the levers of power in our federal government," House Speaker John Boehner said in a statement. "It's time to scrap the failed 'stimulus' agenda."

Republican National Committee Chairman Reince Priebus added: "Tonight's election proves yet again that President Obama is failing our country. Not only are the President's policies not working, but his non-stop campaigning is no longer winning over voters."

Weprin, a 56-year-old Orthodox Jew and member of a prominent Queens political family, initially seemed a good fit for the largely white, working-class district, which is nearly 40 percent Jewish.

But voter frustration with Obama put Weprin in the unlikely spot of playing defense.

While Obama won the district by 11 points in 2008 against Republican John McCain, a Siena Poll released Friday found just 43 percent of likely voters approved of the president's job performance, while 54 percent said they disapproved. Among independents, just 29 percent said they approved of Obama's job performance.

Turner, a 70-year-old Catholic, vowed to push back on Obama's policies if elected. He received help from prominent Republicans including former Mayor Rudy Giuliani, whose much-praised stewardship of the city after the Sept. 11, 2001, terror attacks was recalled during the 10th anniversary of the attacks last weekend.

Weprin also became embroiled in New York-centric disputes over Israel and gay marriage, which cost him some support among Jewish voters.

Orthodox Jews, who tend to be conservative on social issues, expressed anger over Weprin's vote in the Assembly to legalize gay marriage. In July, New York became one of six states to recognize same-sex nuptials.

Former Mayor Ed Koch, a Democrat, endorsed Turner in July as a way to "send a message" to Obama on his policies toward Israel. And Weprin was challenged on his support of a proposed Islamic center and mosque near the World Trade Center site, in lower Manhattan.

The House seat opened up when Weiner was pushed by party leaders to resign after sending sexually provocative tweets and text messages to women he met online.

The trouble for Weiner, who served seven terms, began when a photo of a man's crotch surfaced on his Twitter feed. He initially denied the photo was of him but later admitted it was.

Weiner, who's married, resigned June 16 after two weeks of fighting off pressure to step aside. He apologized for "the embarrassment that I have caused" and said he hoped to continue to fight for the causes dear to his constituents.

Obama pushes jobs plan as help for Hispanics (AP)

WASHINGTON ? Courting Hispanics while promoting his new jobs plan, President Barack Obama on Wednesday told a black-tie Latino audience that his $447 billion package of tax cuts and public works spending would put more money in the pockets of Latino workers and business owners and increase opportunities for Hispanics.

The president made his pitch to the Congressional Hispanic Caucus Institute's 34th Annual Awards Gala. The event is part of Hispanic Heritage Month.

Addressing an important constituency both in the voting population and in Congress, the president kept up his vigorous public relations campaign for his economic measures while also beseeching the crowd to help him pass his education and immigration agenda.

"Lift up your voices," he told an audience that included Princess Cristina of Spain and Supreme Court Justice Sonia Sotomayor. "Make yourselves heard."

Obama's economic plan, the administration's top priority, received polite applause from the crowd. People saved their loudest approval for the president's assurance that he remained determined to pass a rewrite the nation's immigration laws to offer a pathway to citizenship for 11 million undocumented immigrants.

Blaming Republican resistance, he said: "It's been a long and frustrating road for all of us".

Obama said changes in immigration law are key to economic growth and would fulfill what he called "the idea of America."

"No matter what you may hear, in this country there is no `us' or `them.' There is only `us.' One nation, under God, indivisible," he said. "And immigrants are part of that American family and a source of our strength."

In advance of his remarks, the White House said the jobs proposal would lower payroll taxes for about 25 million Hispanic workers and about 250,000 Hispanic-owned businesses, statistics cited by the president to argue his case. Moreover, the White House said the legislation could help the 344,000 Hispanics no longer working as carpenters or as construction laborers because of the recession.

"You know how hard this recession has hit families, especially Latino families," Obama said.

The Congressional Hispanic Caucus Institute also presented its 2011 Chairman's Award to Labor Secretary Hilda Solis and Interior Secretary Ken Salazar.

This will be veering away from my lesson plan but I believe that when an opportunity strikes, it has to be seized. Friends, the Philippine Stock Exchange Index or PSEi is one of the best performing indexes in the Asian region and it would be a letdown for me if I don?t let you in on this opportunity to earn a lot more than your usual deposits. But before anything else, let?s start with stocks. What are stocks anyway?

Company Ownership Types

If you listened in class, you would know that there are three basic types of company ownership: sole proprietorship, partnership, and a corporation. A sole proprietorship is owned by one person only, as the name implies; the taxes and other liabilities of the company are the proprietor?s liability as well. A partnership is owned by two or more partners, with liabilities equitably and personally shared by partners according to the interest stake. A corporation on the other hand is owned by five or more shareholders, it is by itself a legal entity or a separate person; incorporating (from the Latin incorporare, union into one body) is the act of forming a separate entity that has its own legal rights and obligations separate and distinct from its shareholders, i.e. the income tax of the corporation is separate from the income tax of each shareholder, the corporation may be sued and the shareholders will not have to answer for it, etc.

Stocks

As evidence of ownership, corporations issue stocks or shares. Holders of these shares or stocks are called, obviously, shareholders or stockholders. The stocks that people can invest in are stocks of public companies. In the Philippines there are thousands and thousands of privately-held companies, big and small, from the panaderia in your kanto to the big manufacturers in the eco-zones. However, there are only just more than 200 public companies listed on the stock exchange. Companies list in stock exchanges to have access to public equity financing, meaning, they sell their shares to the public in exchange for the investor?s money. The company uses this money to finance some of its operational or growth needs. The investors on the other hand, become owners and may earn from shares on the profit or dividends and has the right to vote on certain matters during general assemblies. For the company, this is an alternative to debt financing, borrowing money ? taking in more debt ? to finance your operations. For example, Cebu Air, Inc. a subsidiary of JG Summit Holdings (the holding company of the Gokongwei family), will list on the Philippine Stock Exchange and do an Initial Public Offering ? the largest in the history of the PSE ? to buy more aircraft.

Stock Exchange

There is only one stock exchange in the Philippines and that is the Philippine Stock Exchange. The PSE is an independent company licensed by the Securities and Exchange Commission to operate as an exchange. There is another exchange in the Philippines called PDEX or the Philippine Dealing and Exchange Corporation but this is a debt and foreign exchange, rather than a stock exchange. In some countries, there are
multiple exchanges like in Germany and India and different types of exchanges like commodities exchanges, where metals, oil and other products are exchanged. The concept of the stock market is actually very simple. The price of the shares are dictated by the buyer and sellers of the shares. Once a deal between a buyer and a seller closes, that price will appear on the ticker as the ?Last? price. The price is ruled by the law of supply and demand, the greater the demand, the higher the price, the greater the supply, the lower the price. The supply and demand is affected mostly by public perception of the company?s business performance or by speculative plays by some investors. Investors tend to dump shares into the market when they hear bad news about the company?s financials, increasing the supply and driving prices down.

As an analogy, you can literally company the stock market to a public market. If you?re buying pork from the market, you usually have an idea of how much it costs and you have a budget allocated for it. The pork also has an idea how the pork costs and has a set selling price. The buyer is free to look for vendors selling pork at the price he thinks is fair and the vendor is also free to look for buyers who think that he is selling the pork at a fair price. Negative news such as foot-and-mouth disease or under-supply of meat will affect pork prices, driving their prices down. There really is truth in the popular jest that the stock market is ?parang palengke lang? because both markets work on the same principle.

Stock Index

You see news agencies like the CNN and BBC and newspapers like the Inquirer publishing performances of indices such as Dow Jones, S&P 500 and PSEi. Indices are ways of measuring the performance of stocks in a given market. An index is a basket of stocks that is weighted depending of a certain criteria. The PSEi for example is composed of 30 stocks weighted according to their free-float adjusted market capitalization. It?s easier to understand in a real life analogy. The index is like your general weighted average in school. Subjects ? like? stocks - are weighted depended on the number of units they carry. A 5-unit class with a grade of 1 will have more impact on the average that a 2-unit class with a grade of 2, because of the weight of the units. Similarly, you will compare your performance in one class with the average to see where you?re doing good and where you need some improvement. For example, if you have a grade of 1 in Bio Lab and your average for the semester is 1.5, you?re doing better in Bio Lab than your overall average performance. Similarly, if your stock is up 10% and the index is up 5%, this means that your stock is over-performing the index (that?s a good thing) and that you?ve invested your money well. High-fat diet and lack of enzyme can lead to heart disease in mice

It's no secret that a high-fat diet isn't healthy. Now researchers have discovered a molecular clue as to precisely why that is.

Writing in the Journal of Biological Chemistry, Mitchell Lazar, MD, PhD, the Sylvan Eisman Professor of Medicine and director of the Institute for Diabetes, Obesity, and Metabolism at the Perelman School of Medicine at the University of Pennsylvania, and colleagues, describe that mice lacking a gene-expression-controlling enzyme fed a high-fat diet experience rapid thickening of the heart muscle and heart failure. This molecular link between fat intake and an enzyme tasked with regulating gene expression ? at least in mice ? has implications for people on so-called Western diets and combating heart disease. Modulating the enzyme's activity could be a new pharmaceutical target.

The team found that the engineered mice without the enzyme HDAC3 tended to underexpress genes important in fat metabolism and energy production. Essentially, when fed a high-fat diet, these animals' hearts cannot generate enough energy and thus cannot pump blood efficiently.

These same mice tolerate a normal diet as well as non-mutant, normal animals. "HDAC3 is an intermediary that normally protects mice from the ravages of a high-fat diet," says Lazar.

HDAC enzymes control gene expression by regulating the accessibility of chromatin - the DNA and protein structure in which genes reside. Within chromatin, DNA is wound around proteins called histones. Genes in tightly wound chromatin areas are generally inaccessible and suppressed, whereas those in loosely packed areas can be activated.

When an animal eats, its metabolism changes, but food doesn't change a cell's genome. Instead, food modulates the "epigenome," molecular markers on the chromatin that influence gene expression by affecting how tightly DNA is wrapped around its protein scaffolding.

Previously, researchers at the University of Texas Southwestern Medical Center showed that if HDAC3 were deleted in heart tissue in the middle of embryonic development, the animals developed severe thickening of the heart walls (hypertrophic cardiomyopathy) that reduces the organ's pumping efficiency. These animals usually died within months of birth.

Lazar and his team wanted to know what would happen if the gene was inactivated in heart tissue after birth. To their surprise, they found that these animals were essentially normal.

On a diet of regular chow, the engineered mice lived as long as their normal littermates, although they did tend to accumulate fat in their heart tissue. On a high-fat diet, however, these animals deteriorated rapidly, dying within a few months of hypertrophic cardiomyopathy and heart failure.

To understand why, Lazar's team compared the gene expression patterns of young mutant mice to their normal siblings. They found that the mutant mice tended to underexpress genes important in fat metabolism and energy production. Essentially, on a high-fat diet, these animals' hearts cannot generate enough energy and thus cannot pump blood efficiently.

According to Lazar, this study identifies an "interesting and dramatic example" of the link between diet and epigenetics. Now his team is working to identify the molecular nature of that link. They are also investigating whether the same pathway and interaction occurs in humans since it may contribute to the increased heart disease associated with Western diets.

Whatever the outcome of those studies, says Lazar, there is one sure-fire intervention people can always use to stave off the ravages of over-nutrition: Changing your diet. "We don't want to forget that that's still a noble thing to strive for," he says.
